Preserving your garden produce for the winter, a two day course at the Macalla farm, Clare Island with Christophe Mouze
17th - 18th September 2011

This  course is for those who want to learn to preserve the produce of their garden for the winter, an important skill for anyone aiming at self sufficiency in matter of food.
We will talk about various ways of preserving fruit and vegetable, such as making jam and chutney, but also fermenting, freezing, bottling or simply storing.

The course starts at 11 am on the Saturday and ends at 4.30 pm on the Sunday. The days are spent between the gardens, polytunnels and orchard, harvesting fruit and vegetables, and the kitchen where we cook and preserve them. 

On that course you will learn:

Ingredients used will be harvested from the farm’s organic gardens or collected from the wild.

Recipes will be given and there will be samples to take home.  

Price for the course is 200 euros and includes vegetarian food, shared accommodation and tuition. If you are interested in this course, we recommend you book early, as number is limited to 8 participants.
